My favourite healthy recipes.
Beans and vegetables
This recipe is easy to make and is really healthy. I found it on the internet a change it a little to my liking. So here goes.
- 1 can of pinto beans witch is about 240 gr.( 8.5 oz)
- 1 big potato cut in small cupes and take the skin off
- 3 selleri stalks cut down into small pieces
- half a can of butter beans
- 1 teaspoon coconut oil
- 1 onion sliced thinly doesn’t matter if it is a regular one or a red one
- 1 yeast free vegetable stock cube.
I put the beans in a pot and have water just floating a little over them, put them on the stove and let the bowling come slowly up. It is good to have the onion, potato and selleri already cut down put you can also do it while you are bowling the beans. I take a pan and put the coconut oil on and then the onion and fry the onion for a little while, don’t let it cook all the way trough. When the beans have been boiling for a little while (just few minutes) I put in the potato, selleri and the vegetable stock cube.I also put some sea salt flakes in it just good to taste it ( I think I am around 1 teaspoon of salt) Then the onion comes in. I let all of this cook on a low heat for about 15-20 minutes. I want it to look like mash potatoes ( just all mashed together).
It only takes around 30 minutes to do this dish and it is super healthy and has no sugar in it, no dairy (lactose) in it, no wheat, egg free,gluten free, nut free and is vegan friendly. I love to eat it with some burrito pancakes, put it in there with some spinach and green pepper and enjoy. And of course I make sure my burrito pancakes are whole grain or even made with spelt. This recipe is good for about 2-3 people so if you are cooking for many people than just double.
